This is an excellent video and explains how Air Conditioning works in your car. It is clear and well-explained and I recommend you take 20 minutes to watch it.
With standard AC, the temperature can only vary between hot and cold.
When the desired level of cooling is reached, if it then starts to get too cold you have to manually turn the AC off.
The AC will run permanently until the user makes some adjustment.
Climate Control is a "smarter" version of Air Conditioning.
Climate Control allows the user to be able to actually set a specific desired temperature. With the use various extra sensors, the car will get to temperature required and will then automatically reduce the output of the AC system so it doesn't then keep getting colder.
This cycle is repeated and therefore the user doesn't have to make any adjustments manually. Usually, in cars with Climate Control, it is active by default as soon as the car is started. It will remember the setting from the previous journey and will then aim to reach that temperature.
